Vanilla Rice Pudding with Dried Cranberries

6 cups 2% milk

¾ cup granulated sugar

¾ cup Arborio Rice (Italian short-grain rice)

½ cup dried cranberries or raisins

¼ teaspoon salt

1 tablespoon vanilla

In a 4 quart saucepan, add milk and sugar heat to a boil over medium high heat, stirring occasionally. Stir in rice, bring to a boil. Reduce heat to low, cover and simmer for 1 ¼ hours or until very creamy and slightly thickened, stirring occasionally.

Remove pan from heat, stir in cranberries, vanilla and salt. Cover and refrigerate at least 6 hours
