Jeff’s Favorite Apple Cake

4 eggs
2 cups sugar
2 tsp vanilla
1 cup oil
6 tbsp water or orange juice
3 cups flour
4 tsp baking powder
1/4 tsp salt

8-10 apples pared and sliced thin
1/2 cup brown sugar
2 tsp cinnamon

1/4 cup icing sugar, if desired. (I dont)

Beat eggs, sugar, and vanilla until fluffy. Beat in Oil, Add Liquid alternately with dry ingredients and beat just until smooth. Spoon Half of the batter into a lightly greased 9×12 baking pan. spread evenly with a rubber spatula. Add apples which have been sprinkled with brown sugar and cinnamon. Cover with remaining batter, (dont worry if it is not all covered, it spreads when baking)
Bake at 350 deg for 60 min, or until nicely brown.

I have made this recipe with cherry pie filling in place of apples.

Jeff sometimes helps me and his cake for some strange reason comes out better then mine.
