Apple Muffins


1/2 cup melted and cooled unsalted butter
1 1/2 cups white sugar
1 teaspoon vanilla
1 eggs beaten
2 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
3 cups chopped apples
2 tablespoons milk or cream

cream butter and sugar, add vanilla and eggs
Stir together dry ingredients and add wet ingredients just to moisten
Add apples and fold gently.
Fill greased muffin cups and bake @ 350 deg for 20 – 25 min.
The batter is very thick and these muffins do not rise high but are moist and delicious.

I got 18. You can cut this recipe in half.
