Oversized cookies are easy to make at home. For a variety, you can use butterscotch flavoured chips, chocolate chips or 1 cup of chopped nuts.
1 cup butter or margarine softened
1 1/2 cups firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups AP Flour
2 teaspoons baking soda
1 teaspoon salt
2 1/3 cups rolled oats
1 cup raisins
In a large bowl of an electric mixer beat butter and brown sugar until creamy, then add the eggs and vanilla.
In another bowl sift together flour, baking soda and salt, gradually add to butter mixture, add oats and raisons, still until combined.
spoon dough into a 1/4 cup measure, level off, and spoon onto a parchment lined baking sheet, space cookies at least 2 inches apart.
Bake at 350 degrees for 15 minutes, let cool on baking sheet for 5 minutes then transfer to cooling rack.
enjoy with a glass of milk.
