Chicken Vegetable and Barley Soup


This soup is delicious, easy and filling, it is comfort food done right.

1/4 cup canola oil
1 1/2 large onions, diced
3 carrots, peeled and diced
1 parsnip, peeled and diced
6 stalks of celery diced
3 skinless, boneless chicken breasts, cubed
2/3 cup barley
2 teaspoons salt
1/2 teaspoon black pepper
10 – 12 cups water, enough to cover
Heat the oil in a large pot on medium heat. Add the diced onions and sauté for five minutes, until translucent.
Add the diced carrot,parsnip and celery. Sauté for an additional five minutes.
Add the cubed chicken, barley, salt pepper and water.
Bring soup to a boil, then reduce heat to medium and leave to simmer for 3 hours. Serve hot.
