4 to 6 bonesless skinsless chicken breast halves
2 tablespoons butter or margerine softened
2 tablespoons finely chopped scallions
2 tablespoons fresh orange juice
2 tablespoons chopped cilantro leaves
1 tablespoon honey
1 to 2 tablespoons grated orange zest from 1/2 orange
Cut each chicken brest half into 3 lengthwise strips. thread 3 strips, accordian style, on each of 4 to 6 metal or wooden skewrs. If using wooden skewrers, soak them at least 10 minutes in cold water before using to prevent scorching on the grill.
In small bowl tir together the margarin, scallions, orange juice, cilantro, honey and orange zest.
Brush about half of sauce on all sides of the chicken, covering each strip well. Set aside to marinate for about 15 minutes. If you have to let the chicken marinate for longer then 15 minutes refridgerate it.
Grill 4 to 6 inches from coals for about 15 minutes, turing several time, until the chicken is cooked through, basting as needed.
