Goat Cheese and Herb Dip
There is a cheerful pleasure in scooping up something delicious, a satisfaction in the contrast between the smooth texture and the crunch of raw vegetables, crisp bread or potato chips. Put together a dip or two of your own; a more sophisticated recipe, fresh and a little piquant, so that every taste prompts an irresistible urge for another. Voilà!
8 oz (225 g) fresh, soft goat cheese
3 tbsp (45 mL) extra virgin olive oil
3 tbsp (45 mL) plain yogurt
2 tbsp (30 mL) chopped fresh chives
2 tbsp (30 mL) chopped fresh Italian parsley
1/2 tsp (3 mL) chopped fresh rosemary
1 tsp (5 mL) chopped fresh thyme
Salt and black pepper to taste
Step 1: Wash and dry all the herbs. Remove stems from the parsley, rosemary and thyme. Finely chop all the herbs.
Step 2: In a blender of food processor, blend the goat cheese, olive oil and yogurt until smooth. Add the chopped herbs and season with salt and pepper to taste.
Step 3: Transfer to a serving dish and refrigerate until cold and the flavours have blended
