Date-Nut Bran Muffins

2 C. All-Bran
1 C. crushed Shredded Wheat
1 C. boiling water
2 1/2 C. all-purpose flour
2 C. sugar
2 1/2 teaspoons baking soda
1/2 tsp. salt
2 eggs
2 C. buttermilk
1/2 C. vegetable oil
1 C. shopped dates
1 C. raisins
1 C. chopped walnuts

In a bowl, combine cereals and boiling water; let stand for 5 minutes. In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, combine eggs, buttermilk and oil. Stir the cereal and buttermilk mixtures into dry ingredients just until blended. Fold in the dates, raisins and walnuts.

Fill paper-lined muffin cups two-thirds full. Bake at 400ยบ for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
Yield about 2 1/2 dozen

***This by far is about the best muffin recipe I have made so far. Very good and tasty and moist!**
