Ingredients:
3 tablespoon lemon juice
2 tablespoon minced Italian Parsley
1 teaspoon sugar
1 clove garlic, minced
1/3 cup extra virgin olive oil
1 or 2 red bell pepper,sliced very thin
1 green or/ and orange bell pepper,sliced very thin
1 yellow bell pepper, sliced very thin
1/2 teas salt
1/4 teas black pepper
Directions:
Combine lemon juice, parsley, sugar, garlic and extra virgin olive oil in a bowl and whisk to blend thoroughly.
I sliced all peppers in my food processor
Place peppers in a separate bowl and pour dressing over peppers and toss to coat.
Add salt and pepper to taste.
Cover and chill for an hour or more to allow flavors to blend.
