Mini muffins for finicky toddlers
1 cup cooked quinoa
1/2 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking soda
1/2 cup light brown sugar
1/4 cup unsweetened applesauce
1/4 cup butter, melted (you could also use olive oil)
1/2 cup plain yogurt
1 teaspoon pure vanilla extract
1 cup grated carrots
1 medium apple, peeled and diced
Preheat oven to 350 degrees F. Line muffin tin with baking cups or coat them with baking spray.
Cook the quinoa according to package ingredients.
In a medium bowl combine the flours and baking soda
In a large bowl combine the brown sugar, applesauce, butter, yogurt, vanilla and eggs. Add the carrots, apples and quinoa, stirring to combine.
Fold in the dry ingredients and mix until just combined. Divide among muffin cups and bake 10-15 minutes for mini muffins or 20-25 minutes for regular muffins. The muffins are done when golden brown and a toothpick inserted in the center comes out clean.
