Puttanesca Dipping Sauce

This simple sauce goes great with calamari.
• 1 tablespoon of olive oil
• 1 shallot, finely chopped
• 1 clove of garlic, minced
• 1 tablespoon of tomato paste
• 2 anchovy fillets, finely chopped
• 1/4 cup of diced, pitted black olives
• 1 tablespoon of capers
• 3 tomatoes, diced
• A pinch of chili flakes
• 1/4 cup parsley
• Zest of 1/2 lemon
• Salt and pepper
1. Heat olive oil in a saucepan on medium heat. Add shallot and sautee for 2 minutes. Add garlic, tomato paste, anchovy, olives, capers and fresh tomato. Sautee for another 5 minutes. Season with salt, pepper and chili flakes. Add a little water if too thick. Add parsley and lemon zest.
